Paddington Collins Cocktail

In Paddington station in central London is a bronze statue of a bear sitting on his suitcase, waiting. This bear is Paddington Bear, with his old bush hat, battered suitcase and a love of marmalade sandwiches who, has an endless capacity for getting into trouble but is always polite. As I used marmalade when creating this cocktail it seemed right to name it after two proper English icons – Paddington and the Tom Collins.

Ingredients

  • 60ml Woodford Reserve
  • 1 tsp English Breakfast Marmalade
  • Juice of 1 Lemon
  • Club Soda

Method

  • Shake Woodford Reserve, Marmalade and Lemon Juice in a boston shaker hard with loads of ice
  • Strain into an ice filled collins glass
  • Top with soda
  • Garnish with a sprig of mint
